  • 2 cups almond flour Base of the cookie bars, low in carbs and high in healthy fats.
  • 1/2 cup granulated erythritol Natural sweetener providing sweetness without carbs.
  • 1/4 teaspoon salt Enhances flavors.
  • 1/2 teaspoon baking powder Helps the bars rise.
  • 1/2 cup unsalted butter, softened Adds richness and flavor.
  • 1 large egg Binds ingredients together.
  • 1 teaspoon vanilla extract Adds flavor.
  • 1/4 teaspoon almond extract (optional) For almond flavor.
  • 1/4 cup sugar-free frosting or powdered erythritol for dusting (optional) Optional toppings.

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the almond flour, granulated erythritol, salt, and baking powder. Whisk thoroughly.
  3. In another bowl, cream the softened butter until light and fluffy. Add the egg, vanilla extract, and almond extract (if using). Mix until smooth.
  4. Gradually add the dry ingredients to the wet mixture. Stir gently until a dough forms.
  5. Pour the dough into the prepared baking pan and spread evenly.
  6. Bake for 20-25 minutes until edges are lightly golden and a toothpick comes out clean.
  7. Let the bars cool in the pan for 10 minutes, then lift out and cool completely on a wire rack before cutting into squares.
