Method
 

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together almond flour, baking soda, and salt.
  3. In a large bowl, cream together softened butter and erythritol until light and fluffy, about 2-3 minutes.
  4. Add the egg and vanilla extract to the butter mixture and mix until well combined.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  6. Drop generous amounts of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 12-15 minutes, or until the edges are golden brown and the centers are slightly underbaked.
  8. Allow the cookies to cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
